February is a silent, yet busy, month for Arsenio. While the trees are resting, our team is immersed into pruning to prepare them for the next season.

On this Sunday, the olive groves have fallen silent. All week they have been full of ladders and hand-held saws, music and chatter but today we - and they - are resting.
We have been busy pruning each and every tree, an essential and skilled operation, performed by expert hands with love and skill. Although the mornings have been frosty and skies grey, temperatures during the warmest part of the day have been generous. No Italian lunch, even one enjoyed leaning back against the trunk of an olive tree, is complete without coffee, so a Moka pot was set up in the grove for all to enjoy.
