This recipe for Baba Ganoush, a typical dish of eastern Mediterranean cuisine, can be prepared in minutes and is perfect as an aperitivo or a vegetarian side. In Arabic, “baba” means father and “ghanoush” means spoiled….
Take a couple of eggplants and, if possible, char over an open flame for an authentic smoky taste. Remove the pulp and finely chop before adding some tahini, freshly squeezed lemon juice and salt. Beat until smooth and serve with fresh mint leaves, a scattering of pomegranate seeds and a pour of Di Moraiolo Extra Virgin Olive Oil. Baba Ganoush is creamier than hummus and the characteristic pungency of Moraiolo monocultivar is just right to make this dish sing.
